
Buckwheat Chilli
Our Sour Creamy goes perfect with this quick and hearty chilli.

Ingredients
- 1 red onion, finely diced
- 3 cloves garlic, crushed
- 1 tsp onion powder
- 1 tsp smoked paprika
- 1 tsp sweet paprika
- 1 1/2 tsp cumin powder
- 500mlpassata
- 1 tin chickpeas, drained
- 1 tin black beans, drained
- 100g buckwheat groats
- 1 red capsicum, diced
- 2.5 cups water
- 150g frozen corn
- 1 tbsp lemon juice
- 1/2 tsp salt
- Pepper to taste
- LOCO Sour Creamy
- Optional: Cayenne pepper or chilli powder for extra spice
Method
- Sauté one finely diced red onion in a little oil. Then add 3 cloves crushed garlic, 1tsponion powder, 1tsp smoked paprika, 1tsp sweet paprika and 1.5 TSP cumin powder. Add some cayenne pepper or chilli powder if you like it spicy. Cook for 1 min.
- Then add 500ml passata, 1 tin drained chickpeas, 1 tin drained black beans, 100g buckwheat groats, 1 diced red capsicum and 2.5 cups water and simmer for 20 mins with the lid on.
- Then stir through 150g frozen corn, 1 TBS lemon juice, 1/2 TSP salt and plenty of pepper and cook for 2 mins until corn has cooked through.
- Serve with LOCO sour creamy, pickled onions, coriander and lime
