Christmas Trifle with Passion Fruit and Whipped Cream

You’ve got time to road test this ripper of a Christmas Trifle before the Big Man visits. In case Santa’s gone vegan this year, or just needs a dairy-free alternative to heavenly whipped cream, we have your leave-out Chrissy Eve treats covered (if you can resist devouring it first yourself).

  • 400g leftover Christmas pudding, crumbled
  • 150g ginger bread biscuits, broken into bite-sized pieces
  • 4 fresh passionfruit
  • 1 tbs icing sugar¬†
  • 1 tsp Vanilla bean paste
  • 300g LOCO Thickened Cream, whipped
  1. Whip the LOCO Thickened Creamy and fold in the icing sugar, vanilla and the pulp from 2 passionfruit.
  2. To assemble, place 2 spoonfuls of the filling in the bottom of small glasses, followed by a generous layer of Christmas pudding and some pieces of gingerbread (for added crunch).
  3. Then top with another 2 spoonfuls of the whipped cream mixture and decorate with remaining passionfruit pulp. Set aside to be enjoyed within 4 hours or enjoy immediately.
